How do you say this in SPANISH?

Your in a Spanish restaurant and your talking to the chef about the pollo entero that you just ordered. You DONT like the chicken well done on the outside. How would you ask for this?? Someone recomended saying " no caymada" or " no bien hecho"... are either of these correct ways of asking for a chicken which is not well done, or is there a better way to say it..
